Zucchini Broccoli Sandwich



INGREDIENTS:


Bread  - 2 slices, toasted
Zucchini - 2, grated
Broccoli - 15 to 20 florets, blanched
Coriander Chutney - 1/4 cup
Oil  - 2 tsp
Oregano


Filling:


Heat oil in a pan. Add in the grated zucchini and fry for 4 to 5 mins. Then, add salt and green chilli paste. Mix well.


Sandwich:


Spread some mint-coriander chutney on the toasted bread slices. Then, spread a generous amount of zucchini mixture. Place 3 to 4 Broccoli florets on it. Sprinkle some oregano and top it with another bread slice. Slice it and serve.
