Zucchini Boats





INGREDIENTS

Zucchini - 4 to 5, sliced vertically into half and de-seeded

Black Bean-Corn Filling:

Black Beans  - 1/4 cup
Sweet Corn  - 1/4 cup
Bell Peppers  - 1/4 cup, finely chopped (any color)
Olive oil  - 1 tsp (optional)
Lemon juice  - 1 tsp
Pepper  - 1/2 tsp, freshly ground
Salt  - to taste

Bread-Tomato Filling:

Bread  - 2 slices, cut into small pieces
Tomato  - 1, de-seeded and diced
Sweet Corn  - 2 tsp
Cottage Cheese  - 1/3 cup, crumbled
Pitted Olives  - 5 to 6, chopped
Pepper  - 1/2 tsp, freshly ground
Salt  - to taste
Oregano  - 1 tsp

Take 2 mixing bowls and prepare the filling by tossing in all the ingredients as mentioned above.
Fill in the sliced zucchini with the prepared mixture. Arrange them on a baking tray. Bake them in a pre-heated oven at 400 deg F for 20 mins. 
Serve these boats either while hot or at room temperature. They just taste delicious anyways!!

Tip:

Slice the zucchini vertically into half and scoop out the seeded part with the help of a spoon.
