Quick Carrot Tomato Soup
INGREDIENTS
Carrot - 2, sliced
Tomato - 1, sliced
Garlic - 1 pod
Salt - to taste
Pepper - freshly ground (for garnish)
Boil or steam the veggies with half litre of water. Peel off the skin from the tomatoes. Blend in a mixer jar or using a hand bender. Transfer to a pan, add salt and allow to boil for about 5 mins. Sprinkle some freshly ground pepper if you prefer. Serve hot!
This is a quick and simple soup with minimum ingredients, yet a delight for cough and colds.
