Moong Dal Upma
Moong Dal Upma - a protein packed breakfast!
INGREDIENTS:
Moong Dal - 1 1/4 cup
Ginger - 1 inch piece
Oil - 3 tbsp
Mustard Seeds - 1/2 tsp
Chana Dal - 2 tbsp
Urad Dal - 2 tbsp
Cashews - 10 to 12, optional
Curry leaves - 9 to 10 leaves
Turmeric powder - 1/2 tsp
Onion - 1, finely chopped
Capsicum - 1/2, finely chopped
Green Peas - 1/4 cup
Green Chillies - 3 to 4
Salt - to taste
Lemon juice - 4 tbsp
Soak moong dal for about 4 to 5 hours. Drain and grind into fine paste, adding in 3 green chillies and ginger. Add only about 2 to 3 tbsp water for grinding.
Add in a 1/4 tsp baking soda, salt and allow to ferment overnight to make softer idlis.
Grease idli plates or a flat bowl with oil. Pour the batter into it and steam for 20 mins.
Once the idlis or the moong dal cake has cooled completely, crumble them in a mixing bowl. You can do it manually or even use mixer grinder.
Heat oil in a pan, add in the mustard seeds, chana dal, urad dal, curry leaves, onions, capsicum and saute for about 2 mins. Then, add in the green peas and turmeric powder.
Next, add in the crumbled moong dal mixture and mix everything gently. Mix for about 3 to 4 mins until the mixture heats up evenly.
Add in lemon juice, salt and garnish with coriander. Serve hot!
Tips:
Can add in some fried cashews and garnish with fresh grated coconut.
