Pita Pizzaaaa !




INGREDIENTS:


Pita Bread  - 2
Coriander chutney - 1/2 tsp
Pizza sauce  - 1/2 tsp
Oil  - to drizzle
Onions  - 2, vertically sliced
Tomatoes  - 2
Cottage Cheese (paneer) - 1/4 cup, cubed
Bell peppers (any color) - 1, chopped
Sweet corn  - 1 cup
Baby Spinach  - 12 to 15 leaves
Oregano - for garnish
Chilli flakes  - for garnish
Salt  - to taste


Topping:


Heat a tsp of oil in a pan. Add in the onions, bell peppers, corn and stir fry them for about 2 mins. Then, add in the cottage cheese, salt and fry for another minute. Now, the topping is ready.

Place the pita bread on a lined baking tray. Drizzle some oil (olive). Gently spread the pizza sauce and coriander chutney. Bake them in a pre-heated oven at 300 deg F for about 3 mins. Remove from oven. Arrange the tomato slices, spinach leaves and spread the prepared topping. Sprinkle some oregano and red chilli flakes. Place it back in the oven for another minute or so. Cut into pieces using a pizza cutter or a knife and enjoy!
