Methi Dhokla


INGREDIENTS:

Rice - 3/4 cup
Urad Dal - 1/2 cup
Water - 4 tbsp, for grinding
Yogurt - 1/4 cup
Methi leaves - 1/2 cup, chopped
Green Chilli paste - 1 tsp
Ginger paste - 1/2 tsp, optional
Baking soda - 1/4 tsp, optional to ferment batter
Salt - to taste


Ingredients for Seasoning:

Oil - 2 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/4 tsp
Till seeds - 1/4 tsp
Curry leaves - 5 to 6
Green chillies - 3 to 4


PROCEDURE:

Grind the 2 ingredients together into a smooth paste by adding very little water.
Transfer to bowl, add salt, a pinch of baking soda and yogurt. Mix well.
Allow to ferment overnight.
Then, add in methi leaves, green chilli paste and ginger paste. Mix well.
Grease the idli vessel with oil and pour in the batter.
Steam in pressure cooker for 18 mins.
Prepare a seasoning with the above ingredients and pour it over the dhokla.
Cut into pieces of desired shape and enjoy.


TIPS:
I have used sona masoori rice here. Grind the rice and dal together.
The above mentioned quantity serves 3 to 4 people for breakfast.
The consistency of the batter has to be very thick. Add few tbsp of water while grinding.
Dhokla can be served with mint chutney.
