Tasty Bitter Gourd Masala



INGREDIENTS:

Bitter gourd  - 1 lb
Onion  - 1, finely chopped
Tomato - 1,  finely chopped
Oil - 4 tsp
Cumin seeds  - 1/2 tsp
Tamarind powder  - 1/2 tsp
Red Chilli powder - 1 tsp
Tamarind pulp - 1 tsp
Jaggery powder - 2 tsp
Salt  - to taste

Procedure to chop bitter gourd:
Wash the bitter gourd and roughly scrape the outer skin with a vegetable peeler. Then, slice it vertically into half. Scoop out the seed portion of it. Then, cut them into smaller pieces and add to a bowl. Add 2 tsp of salt, a glass of water and allow it to sit for atleast an hour. Drain the bitter gourd and keep aside. 
Heat about 1 ltr of water in a pan and add the bitter gourd into it. Allow it to boil for about 5 to 7 mins. Drain and keep aside.

Heat oil in a pan. Add in cumin seeds and turmeric powder. Then, onions and saute until translucent. Add in tomatoes, salt and stir intermittently. Once this mixture turns a little mushy, add in the bitter gourd pieces and mix. Cover and cook for another 2 to 3 mins.Then, add the tamarind pulp, jaggery, red chilli powder and mix well. Allow this mixture to cook for another 3 to 4 mins. Garnish with coriander.
Serve with rice or roti.
