Pumpkin Soup



This is my 50th recipe! Its also special as I have prepared it using my new Instant Pot.

INGREDIENTS:

Pumpkin  - 1 lb, diced
Onion  - 1, chopped
Oil  - 3 tsp
Vegetable stock/water  - 3 cups
Salt  - to taste
Pepper  - 1 tsp, freshly ground


Instant Pot method:

Plug in the Instant pot and select the 'Saute' mode.
Set the temperature to 'Medium'.
Once the pot gets heated, it indicates 'HOT' on the display.
Add oil into it.  Then, the onions and saute until translucent.
Next, add in the pumpkin pieces and saute for a minute.
Then, add in salt and water (or vegetable stock)
Press the 'Cancel' button to exit the 'Saute' mode.
Secure and lock the lid.
Next, select the 'Soup' program and set the Timer to 8 mins.
Once the 'floating valve' drops down, carefully open the lid.
Blend all ingredients smoothly using an immersion blender.
Add crushed pepper. 
Garnish with coriander and enjoy the soup!
