Vegetable Rice



INGREDIENTS:

Mixed Vegetables  - 3 cups, chopped
(Carrots, Green beans, Bell peppers, Potato, Onions, Green peas)
Chickpeas  - 1/4 cup, boiled
Green Chillies  - 3, chopped
Oil  - 5 tsp
Rice  - 1 cup, cooked
Salt  - to taste

SPICE POWDER :

Cinnamon  - 2 inch piece
Clove  - 1
Bengal Gram  - 2 tsp
Split Urad Dal - 2 tsp
Cumin seeds  - 1 tsp
Pepper corns  - 1 or 2

Dry roast the above ingredients in a pan for about 2 to 3 mins or mins until you can feel an aroma. Grind this into a fine powder.

Heat oil in a pan. Add in all the vegetables and saute them for about 4 to 5 mins. Switch off the stove and add in the prepared spice powder, salt and mix. Allow it to cool.

Then, add in the cooked rice and mix everything so the vegetable masala coats the rice evenly.
Serve hot with tomato sauce or cucumber raita.

Tips:

You can parboil the potato cubes before sauteing.
The spice powder can be prepared in larger quantity and stored in an air-tight container. Stays good for more than 2 months.
