Raw Banana Paratha
INGREDIENTS
For the masala:Raw Banana - 2, pressure cooked, peeled and grated
Onions - 1, medium, finely chopped
Red Chilli powder - 1 tsp
Coriander-Cumin powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Dry Mango Powder - 1/2 tsp
Turmeric Powder - 1/2 tsp
Oil - 4 tsp
Salt - to taste
Coriander - 2 tsp, finely chopped
For the paratha:
Wheat flour (aata) - 2 cups
Salt - 1/2 tsp
Oil - 4 tsp
Water - as needed
Raw Banana Mixture for filling:
Heat oil in pan. Then, add in the onions and fry until they turn slightly brown. Next, add in all the powders mentioned in the list and mix. Then, add in the grated raw banana and mix everything gently. Garnish with coriander. This masala goes well with rice as well.
Allow it to cool down before rolling them into the parathas.
Paratha:
Knead the flour like you normally do for the chapathis. Allow it to rest for an hour. Take a lemon-sized portion of the dough and roll it into a patty shape. Dust some wheat flour over it and roll it with a rolling pin. (to the size of a burger bun) Then, take about 4tsp of raw banana mixture and place it in the centre. Now, gather the edges of the rolled paratha and cover the mixture and slightly press down to seal it completely. Dust some wheat flour on top and start rolling it again. Once done, transfer it onto a heated skillet. Apply some oil or ghee and roast on both sides until golden brown.
Serve it with some plain curd, pickle or tomato ketchup.
Tips:
Trim the edges of the raw banana and cut it into half. Sprinkle some water and pressure cook until 2 whistles. Allow it to cool and remove the skin. Then, grate it.
