Palak Pulao



INGREDIENTS

Spinach  - 1 medium sized bunch, chopped
Onion - 1 medium sized, vertically sliced
Paneer  - 1/2 cup, cubed 
Green peas  - 1/4 cup, fresh or frozen
Ginger-garlic paste  - 1 tsp
Green Chillies  - 3, vertically sliced
Cumin seeds  - 1/4 tsp
Oil  - 6 tsp
Rice  - 1 cup, washed and soaked for 15 mins
Milk  - 1/4 cup, boiled and cooled
Water  - 2 cups
Salt - to taste

Dry Spices :

Cinnamon  - a small piece
Bay leaf  - 1
Clove  - 1
Cardamom  - 1 shell

Heat 2 tsp oil in pan and add the paneer cubes. Fry for about a minute or two and keep aside.

Take the remaining oil in a pan or a pressure cooker. Add the cumin seeds, dry spices, green chillies, onions and saute. Then add in the ginger-garlic paste and mix. Next, add in the green peas, chopped spinach leaves and saute for about 2 mins. Then, the rice, salt, water, milk and give it a good mix. Cook on medium flame for a single whistle. Allow to cool and garnish with paneer.

Tips :

This rice can be served with cucumber raita.
