Chickpea and Sweet Potato Salad





INGREDIENTS

Chickpea - 1 large cup or 250 grams(soaked overnight)
Sweet potato - 2 to 3
Yogurt - 1 cup
Salt to taste
Pepper (freshly ground) - 1/2 tsp (black or white)
Dry Mango powder - 1/2 tsp
Lemon juice  - 2 tsp
Olive Oil  - 1 tsp

Pressure cook the soaked chickpeas. Cut the sweet potato into cubes, add a pinch of salt and boil them in an open vessel for about 10 minutes. 

Mix yogurt, salt, freshly ground pepper, dry mango powder, olive oil and lemon juice for salad dressing. 

Add the boiled chick peas, sweet potato, dressing into a large bowl and mix well.  

Finally, garnish with coriander leaves.

Chick peas or garbanzo beans are high in protein. Sweet potato has vitamins - A,B and C. These two make a healthy combo!
