Baked Fries





INGREDIENTS:

Potatoes - 1 lb, washed and cut
Olive Oil - 1 tbsp
Corn flour/Rice flour - 1 tsp
Pepper powder - 1 tsp
Salt - to taste
Oregano - 1 tsp (optional)

PROCEDURE:

Wash and cut the potatoes into wedges. You can leave the skin of the potatoes if you wish.
Soak them in water for about 10 mins to eliminate the starch in them.
Then, drain off the wedges and dry them on a kitchen towel. Allow to dry for about 10 mins.
Transfer them into a bowl and add in the remaining ingredients mentioned above.
Gently mix so the potatoes can be coated well with the mixture. 
Arrange them onto a lined baking tray and bake in a pre-heated oven at 350F for about 40 mins, Remove the tray half-way through and flip the potatoes so as to ensure even baking on both sides.
Remove from oven. Sprinkle some oregano if you like and enjoy!

It can also be served with a mint-yogurt dip or sauce of your choice.

Note:

Zucchini fries also can be made in the same way. You can coat the zucchini pieces with bread crumbs and then place in oven.
