Quinoa Pulao
Quinoa is a super-grain which is high in fiber and protein. It is gluten-free. A cup of quinoa contains 8 gm of protein! Its high in important minerals like iron and magnesium and helps to control blood sugar levels.
INGREDIENTS:
Quinoa - 1 cup
Water - 1 3/4 cup
Vegetables - 1 cup, mixed (carrot, beans, onion, capsicum, green peas, sweet corn, spring onion)
Turmeric powder - 1/2 tsp
Red Chilli powder - 1/2 tsp
Garam masala - 1 tsp
Lemon juice - 1 tbsp
Bay Leaf - 1
Cinnamon - 1 piece, 1 inch
Oil - 2 tbsp
Salt - to taste
How to cook quinoa:
Wash and rinse quinoa two times. Drain and pour into a bowl. Add water, a pinch of salt and 2 drops of oil to it. Cover and boil for about 20 mins. Allow to cool and fluff up the quinoa with a fork.
Alternately, you can pressure cook it until a single whistle.
PROCEDURE:
Heat oil in pan. Add in bay leaf, cinnamon and all the vegetables. Saute for about 4 to 5 mins until the veggies turn a little soft. Add in the turmeric, red chilli and garam masala powder. Then add in the cooked quinoa, salt and mix well. Garnish with lemon juice, spring onion and coriander.
