Zucchini Capsicum Salad



INGREDIENTS : 

Zucchini - 2, chopped into 1 inch pieces
Capsicum - 1, chopped
Oil - 3 tsp
Cumin seeds - 1/2 tsp
Yogurt - 1 tbsp
Red Chilli powder - 1/2 tsp
Cumin powder - 1/2 tsp
Salt - to taste

Mix the yogurt, red chilli powder, cumin powder and salt in a bowl and keep aside.

Heat oil in a pan. Add in the cumin seeds, capsicum and stir fry for about 2 mins. Next add in the zucchini pieces and fry for about 3 mins stirring intermittently. Pour in the yogurt mixture while reducing the heat slightly. Mix well and take it off the stove. Sprinkle some red chilli powder and roasted pumpkin seeds as garnish. Enjoy this healthy simple salad!
