Spinach Spring Onion Bread



INGREDIENTS:

Spinach - 1/2 cup, chopped
Spring onions - 1/3 cup, chopped
All purpose flour (maida) - 1 cup
Baking Powder - 1 1/2 tsp
Baking Soda - 1 tsp
Curd - 1/2 cup
Milk - 1/4 cup
Oil - 3 tbsp
Butter - 1 tbsp (at room temperature)
Green Chilli paste - 1 tsp
Vinegar - 1 tspSalt - to taste



Preheat the oven to 180 C. Dust the cake pan with some plain flour.

Combine together flour, baking powder, baking soda and salt in a bowl. Sieve all together making sure there are no lumps.

In a large bowl, combine curd, milk, butter, vinegar, green chilli paste and oil. Whisk to combine them.

Now, add in the flour mixture (all dry ingredients). Mix well using a whisk or hand blender. At this point, add in the spinach and spring onions and gently swirl once with a spatula.

Pour the batter into the prepared cake pan and bake at 180 C (or 350 F) for 35 mins.

Use a skewer to check if its done. (It should come out clean)

Remove from oven and allow to cool.
