Homemade Peanut Butter



Peanuts are an excellent plant based source of protein.

INGREDIENTS:

Peanuts - 1 cup, roasted and peeled
Honey - 2 tbsp (optional)
Salt - 1/2 tsp

Add the roasted and peeled peanuts into the bowl of a mixer or food processor. Process for a minute. You will see the oil from peanuts starting to release. Then, scrape down the sides of the bowl. Add in the honey and process again for about a minute or two. Transfer into an airtight container and store in refrigerator for up to 2 months.

Spread on a toasted bread slice and enjoy a protein packed breakfast in minutes!
Use it as a dip with any of the fruits like apple, banana or pear.

Notes:
I've used store bought roasted peanuts (Virginia)
You can roast them in the oven by spreading them as a single layer on a pan. Preheat oven to 350 F. Sprinkle some salt over them and allow to roast for about 20 to 25 mins. They will continue to cook and become crunchy as they cool.
Remove the skin by rubbing the peanuts together in your hands. 
Feel free to increase the quantity of honey to make the peanut butter more sweet.
