Spinach Chickpea Curry



Spinach and Chickpeas are a power packed duo as they form an excellent combination of iron and protein!

INGREDIENTS:

Spinach  - 2 bunches, blanched and pureed
Chickpeas  - 1/2cup, boiled
Green Chilli paste  - 1/2 tsp
Cumin seeds  - 1/2 tsp
Garam Masala powder - 1/2 tsp
Oil  - 2 tsp
Butter  - 1 tsp (optional)
Salt  - to taste

Heat oil and butter in a pan. Add in the cumin seeds, green chilli paste, pureed spinach and mix. Allow it to boil for about 2 to 3 mins and add in the boiled chickpeas. Then, add in the garam masala powder, salt and boil the mixture for about 5 mins. Serve it with roti or rice.


Tips:

Boil the spinach in 2 ltrs of water for about 2 mins. Use a hand blender or a mixer grinder to puree it.
You can add in the green chillies along with spinach to grind it.
Soak the chickpeas overnight and pressure cook for 2 to 3 whistles.
