Quick Potato Capsicum Masala



INGREDIENTS:

Potato - 3 medium-sized, cubed
Bell peppers - 2, green and yellow, cubed
Onion - 1, chopped
Tomato  - 1, chopped
Green Peas  - 1/4 cup 
Cumin seeds  - 1/2 tsp
Turmeric powder  - 1/2 tsp
Red Chilli powder  - 1 tsp
Dry Mango powder  - 1/4 tsp (optional)
Coriander powder - 1 tsp
Oil  - 4 tbsp
Salt  - to taste

Heat oil in a pan. Add in cumin seeds, onions and stir. Then, add in the potatoes and fry. Cover lid and allow the potatoes to soften while stirring intermittently. This may take about 7 to 8 mins. You can see a crispy layer forming on the potato cubes. At this stage, add in the tomatoes, turmeric powder, salt, red chilli powder and mix. Then, add the bell peppers, green peas and saute for another 5 to 6 mins. Finally, add in the dry mango powder, coriander powder and mix well. Garnish with some fresh coriander.
Serve with rice or roti.
