Amaranth, Beans and Potato fry
INGREDIENTS:
Amaranth leaves - 1/2 bunch, chopped
Potatoes - 2 medium sized, cubed, blanched and drained
Black beans - 1/4 cup, boiled
Onion - 1, medium sized finely chopped
Tomato - 1, diced
Garlic - 2 pods, minced
Red Chilli powder - 1 tsp
Turmeric - a pinch
Cumin-Coriander powder - 1/2 tsp
Garam masala - 1/2 tsp
Salt - to taste
Oil - 3 tbsp
Heat oil in a pan. Add in the minced garlic, onions and fry until they turn translucent. Then, add in the amaranth leaves and fry for about 5 mins. Next, the tomatoes and stir until they turn mushy. At this stage, add in all the powders, salt and mix. Then, add in the black beans, potatoes and mix everything well. This can be served with rice or roti.
