Beetroot - Corn Pulao



INGREDIENTS

Beetroot  - 1 (cubed)
Corn  - 1/2 cup
Onion  - 1 small (sliced)
Cinnamon  - 1 inch piece
Clove  - 1 or 2
Bayleaf  - 1/2 leaf
Cardamom (elaichi)  - 1 or 2
Oil  - 2 tsp
Ghee  - 1 tsp
Garam Masala powder  - 1 tsp
Rice  - 1 cup (washed and soaked for 15 mins)


MASALA PASTE :

Onion  - 1 medium size
Ginger -  1/2 inch piece
Garlic  - 2 to 3 pods
Green Chilli  - 2

Grind these items into a paste.

RAITA :

Yogurt  - 1 cup
Salt  - to taste
Red Chilli powder  - 1/4 tsp
Cumin powder  - a pinch

Heat oil and ghee in a pressure cooker. Add in the dry spices mentioned above. Then, add the masala paste and saute until the raw smell disappears. Then, add the onions, beetroot and corn. Saute for about 2 mins and add the garam masala powder and rice. Add in salt and 2.5 cups of water and mix well. Close the lid and pressure cook for one whistle. Garnish with coriander and serve along with raita.
