Beet Greens Fry




Ever wondered what to do with the greens which come along with the beet roots? 
Here is a simple beet greens fry which will can be eaten with rice or roti.

INGREDIENTS

Beet root greens  - finely chopped
onion  - 1/2 finely chopped
garlic  - 1 clove, minced
peanuts  - 8 to 10, coarsely powdered
desicated coconut  - 1 tsp (optional)
green chilli paste  - 1 tsp
salt  - to taste
oil  - 2 tsp

Heat oil in a pan. Add in the garlic, onions, green chilli paste and saute for a minute. Then, add in the beet root greens and saute for about 15 mins on low flame.  Finally, add in the salt, peanut powder and mix well. This crunchy beet greens fry can be served with rice, roti or chapati.
