Spinach-Chickpea Stir Fry




INGREDIENTS

Spinach  - 1 bunch
Chickpeas  - 1/2 cup (soaked overnight and boiled)
Onion  - 1 
Tomato  - 2 
Garlic  - 2 pods (chopped)
Jeera  - 1 tsp
Green chilli paste  - 1/2 tsp
Coriander powder  - 1/4 tsp
Garam masala  - 1/2 tsp
Oil  - 3 tsp
Sesame seeds  - 1/2 tsp
Salt  - to taste

Chop the spinach, onions and tomatoes. 
Add oil in a pan. Add jeera, garlic pods, onions and green chilli paste and stir them for about 3 mins until the onions turn golden brown. Next, add the tomatoes and stir well for 2 mins.  Then, the spinach and fry for about 7 to 8 mins. At this stage, add the boiled chickpeas, salt, coriander and garam masala powder and mix well.  
Garnish with sesame seeds and serve with roti or rice!

Spinach .... is an excellent source of vitamins and iron. Combined with the protein packed chickpeas, makes a super-combo food in your plate.
