Roasted Cauliflower and Potato with Almonds



INGREDIENTS

Cauliflower florets  - 2 cups
Potato  - 1 large, diced
Almonds  - 10 chopped
Oil  - 3 tsp
Parmesan Cheese  - 2 tsp grated
Flax-seeds  - 1 tsp
Chilli flakes  - 1 tsp
Salt  - to taste
Coriander  - 1 tsp chopped


Line a baking tray and place the cauliflower florets and the diced potatoes onto it. Drizzle oil on top of the veggies and place the tray in a pre-heated oven at 400 deg F for 10 mins. Remove the tray, sprinkle cheese, salt and place it back into the oven for another 8 mins. Allow 2 minute cooling time and remove the tray. Then, toss in the the chopped almonds, flax-seeds and chilli flakes. Garnish with coriander and enjoy!

Tips :

Dry roasting almonds and flax-seeds for about a minute in a pan adds more flavor to the dish.
