Dill Rice



Dill leaves give you a good dose of calcium and iron. 

INGREDIENTS

Dill leaves - 1 bunch (finely chopped)
Onions - 1 (finely chopped)
Red chillies - 3 to 4 chopped
Chana dal - 1 tsp
Mustard seeds - 1 tsp
Salt - to taste
Vegetable Oil - 4 tsp
Lemon juice - 3 to 4 tsp
Cooked rice  - 1 cup

Add oil into a pan. Then, mustard seeds, chana dal and red chillies. Once they turn light brown, add the onions and saute for about 2 mins. After this, add in the chopped dill leaves. At this stage, reduce the flame to minimum level and mix. Initially, the leaves shrink and start to bunch together. Keep stirring gently. The water content in the leaves starts to evaporate. Dil leaves absorb the oil leaving the pan dry. Add in 1/2 spoon of oil and mix well. Continue frying until you see the leaves turn dark in color and crisp. This may take about 15 mins.  Once done, add in  the cooked rice, lemon juice, salt and mix. 

This rice is sure to boost your energy levels !

Tips:
You can use boiled sweet corn while mixing the rice for more nutrition and taste.
