Black Bean - Cottage Cheese Scramble
INGREDIENTS
Paneer (Cottage Cheese) - 250 gm crumbled
Black Bean - 1/2 cup (boiled)
Bell Peppers - 1 diced (any color)
Onions - 1 sliced (yellow or white)
Ginger - Garlic paste - 1 tsp
Red Chilli powder - 1 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Turmeric powder - 1/2 tsp
Oil - 4 tsp
Lemon juice - 4 tsp
Salt - to taste
Coriander - 1/4 cup chopped
Heat a pan. When hot, pour in the oil and add the bell peppers, onions and ginger-garlic paste. Saute them until the onions turn translucent. Then, add in the crumbled paneer, black beans and mix them. Then, add in all the masala powder (mentioned in the list above), salt, lemon juice and saute for about 2 mins until you see the masala coated well onto the mixture in the pan. Garnish with coriander and serve.
Tips:
This burji or scramble can be served with roti /chapati.
It can also be used as a sandwich filling.
